  • 4 pieces chicken breasts
  • 1 cup low-sodium chicken broth
  • 2 pieces lemons (juiced and zested)
  • 2 tablespoons olive oil
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • 3 cloves garlic (minced)
  • Salt and pepper to taste
Rice Ingredients
  • 2 cups rice
  • 4 cups water For cooking rice

  • Fresh parsley For garnish

Method
 

Preparation
  1. In a slow cooker, combine chicken breasts, chicken broth, lemon juice and zest, olive oil, thyme, rosemary, garlic, salt, and pepper.
  2. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is cooked through.
Cooking Rice
  1. About 30 minutes before serving, cook the rice according to package instructions.
Final Steps
  1. Remove chicken from the slow cooker and shred it with two forks.
  2. Return the shredded chicken to the slow cooker and mix well.
Serving
  1. Serve the chicken over fluffy rice and garnish with fresh parsley.

Notes

For extra flavor, marinate the chicken in the lemon juice and herbs overnight before cooking. Adjust the seasoning to your preference. If you want a thicker sauce, remove some of the liquid after cooking and simmer it on the stove to reduce.
