  • 2 bottles (12-ounce each) Guinness
  • 4-5 pounds corned beef with seasoning packet
  • 2 dried bay leaves dried bay leaves
  • 1/3 cup packed brown sugar
  • 2 teaspoons beef bouillon
  • 1 teaspoon ground coriander
  • 1 teaspoon whole cloves
  • 1/2 teaspoon mustard powder
  • 1/8 teaspoon ground allspice
  • a few dashes Worcestershire sauce

Method
 

Preparation
  1. Pour the Guinness into a slow cooker.
  2. Add the contents of the seasoning packet from the corned beef, bay leaves, brown sugar, beef bouillon, coriander, cloves, mustard powder, allspice, and Worcestershire sauce. Stir to combine.
  3. Place the corned beef in the slow cooker with the fatty side up.
  4. Cook on low for eight to ten hours until the corned beef is fork-tender.
Serving
  1. Slice against the grain or shred with two forks. Serve with cabbage and potatoes, on sandwich bread topped with mustard and pickles, or with green beans or a fresh salad.
Storing
  1. To store leftovers, let the corned beef cool completely, wrap it in plastic wrap or aluminum foil, and store it in an airtight container in the refrigerator for up to three days. You can freeze it for up to three months.

Notes

For added flavor, consider searing the corned beef in a hot pan before placing it in the slow cooker. Feel free to adjust the sugar amount to taste. You can also add vegetables like carrots or potatoes to the slow cooker for a complete meal. For variations, try using a different type of beer or adding cayenne pepper or apple cider vinegar.
