Ingredients
  

Beef Bites

  • 2 lbs chuck roast cut into bite-sized pieces
  • 1 tsp salt adjust to taste
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tbsp minced garlic freshly minced
  • 1 tsp fresh thyme chopped
  • 1 tsp fresh rosemary chopped

Potatoes

  • 1.5 lbs Yukon Gold potatoes cut into chunks
  • 4 tbsp butter melted
  • 1/2 tsp black pepper

Additional Seasonings

  • 1 tsp salt adjust to taste
  • 1 tsp paprika

Instructions
 

  • Trim excess fat from the beef and cut into 1-inch bite-sized pieces.
  • In a large bowl, season the beef with salt, black pepper, paprika, minced garlic, thyme, and rosemary. Let it sit for 10 minutes.
  • Wash and scrub the potatoes. Cut them into chunks and toss them with melted butter, salt, and black pepper.
  • Layer the potatoes at the bottom of the slow cooker.
  • Place the seasoned beef on top of the potatoes.
  • Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until beef is tender.
  • Gently stir before serving and garnish with additional fresh herbs if desired.

Notes

For extra flavor, sear the beef bites in a pan before adding them to the slow cooker.
