Method
- Trim excess fat from the beef and cut into 1-inch bite-sized pieces.
- In a large bowl, season the beef with salt, black pepper, paprika, minced garlic, thyme, and rosemary. Let it sit for 10 minutes.
- Wash and scrub the potatoes. Cut them into chunks and toss them with melted butter, salt, and black pepper.
- Layer the potatoes at the bottom of the slow cooker.
- Place the seasoned beef on top of the potatoes.
- Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until beef is tender.
- Gently stir before serving and garnish with additional fresh herbs if desired.
Notes
For extra flavor, sear the beef bites in a pan before adding them to the slow cooker.
