Ingredients
  

Beef Bites
  • 2 lbs chuck roast cut into bite-sized pieces
  • 1 tsp salt adjust to taste
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tbsp minced garlic freshly minced
  • 1 tsp fresh thyme chopped
  • 1 tsp fresh rosemary chopped
Potatoes
  • 1.5 lbs Yukon Gold potatoes cut into chunks
  • 4 tbsp butter melted
  • 1/2 tsp black pepper
Additional Seasonings
  • 1 tsp salt adjust to taste
  • 1 tsp paprika

Method
 

  1. Trim excess fat from the beef and cut into 1-inch bite-sized pieces.
  2. In a large bowl, season the beef with salt, black pepper, paprika, minced garlic, thyme, and rosemary. Let it sit for 10 minutes.
  3. Wash and scrub the potatoes. Cut them into chunks and toss them with melted butter, salt, and black pepper.
  4. Layer the potatoes at the bottom of the slow cooker.
  5. Place the seasoned beef on top of the potatoes.
  6. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until beef is tender.
  7. Gently stir before serving and garnish with additional fresh herbs if desired.

Notes

For extra flavor, sear the beef bites in a pan before adding them to the slow cooker.
