Ingredients
  

Jalapeno Poppers
  • 12 pieces jalapenos (seeded and membranes removed) Choose firm jalapenos for even cooking.
  • 1 package low-fat cream cheese
  • 1 cup low sodium Panko breadcrumbs
  • 6 strips turkey bacon (cooked and crumbled)
  • 2 Tbsp. Olive oil Used for toasting breadcrumbs.
  • 1 cup low-fat shredded Mexican blend cheese Can experiment with different types of cheese.
  • 1/2 tsp. garlic powder
  • 1/4 tsp. onion powder
  • to taste Salt and pepper Adjust to personal preference.

Method
 

Preparation
  1. Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.
  2. In a medium skillet, heat the olive oil and add the Panko breadcrumbs. Stir until the breadcrumbs turn slightly golden, being careful not to burn them. Remove from heat and set aside.
  3. In a medium bowl, mix together the cream cheese, Mexican blend cheese, and spices.
  4. Stuff each jalapeno half with 1 to 2 tablespoons of the cheese mixture and place on the prepared baking sheet.
Baking
  1. Bake in the oven for 15 minutes, or until the cheese becomes gooey!
  2. Top with breadcrumbs and turkey bacon. Enjoy immediately!

Notes

Serve these poppers hot right out of the oven as a tasty appetizer. They pair well with dips like salsa, guacamole, or sour cream. If you have leftovers, allow them to cool completely before storing in an airtight container in the fridge for up to 3 days. To reheat, pop them back in the oven for a few minutes until hot. You can prepare the jalapenos and stuff them a day ahead.
