Ingredients
  

For the Marinade
  • 1 lb beef strips (sirloin or ribeye)
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sesame oil
For the Sauce and Sauté
  • 2 tbsp soy sauce
  • 2 tbsp oyster sauce (optional)
  • 2 tbsp hoisin sauce
  • 2 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil for cooking beef
  • 1 large onion, sliced
  • 1 tbsp vegetable oil for sautéing onions

Method
 

Prepare the Steak
  1. In a bowl, whisk together soy sauce, oyster sauce, ginger, garlic, and sesame oil.
  2. Toss the beef strips in the marinade and let sit for 10-15 minutes.
Cook the Onions
  1. Heat 1 tbsp vegetable oil in a skillet over medium heat.
  2. Add sliced onions and sauté until soft and slightly caramelized.
  3. Season with salt and pepper, then remove from the pan and set aside.
Sear the Beef
  1. In the same pan, heat 2 tbsp vegetable oil over high heat.
  2. Add the marinated beef strips and stir-fry for 2-3 minutes until browned.
Make the Sauce
  1. In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, and cornstarch.
  2. Pour the sauce over the beef and let simmer until it thickens.
Combine & Serve
  1. Add the sautéed onions back into the pan, stirring to combine.
  2. Serve hot over steamed rice or noodles.

Notes

Cut the beef against the grain to make it more tender. For a spicier dish, add sliced bell peppers or chili peppers. Ensure your pan is very hot when you sear the beef for a nice brown color and prevent it from becoming tough. Store leftovers in an airtight container in the fridge for up to 3 days.
