  • 1 cup rolled oats Use gluten-free oats if necessary.
  • 1/2 cup protein powder Choose your favorite flavor.
  • 1/4 cup peanut butter Can substitute with almond butter.
  • 1/4 cup honey Adjust sweetness to taste.
  • 1/2 cup chocolate chips Feel free to swap with raisins or coconut.
  • 1 egg Can replace with flax egg for vegan option.
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1 pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine rolled oats, protein powder, and baking powder.
  3. In another bowl, mix peanut butter, honey, egg, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients and mix well.
  5. Fold in the chocolate chips.
  6. Drop spoonfuls of the dough onto a baking sheet lined with parchment paper.
Baking
  1. Bake for 10-12 minutes until golden brown.
  2. Allow to cool before serving.

Notes

Store cookies in an airtight container at room temperature for up to a week. Freeze in a freezer-safe bag for up to three months.
