Ingredients
  

For the Shrimp
  • 1 pound shrimp, peeled and deveined Look for pre-peeled and deveined shrimp to save prep time.
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder Adjust based on your heat preference.

For Assembly
  • 8 small corn tortillas Ensure they are certified gluten-free if needed.
  • 1 whole avocado, sliced
  • 1 cup shredded cabbage Use red cabbage for a pop of color if desired.
  • 1/4 cup fresh cilantro, chopped
For the Cilantro Lime Cream
  • 1/2 cup sour cream Greek yogurt can be used as a healthier alternative.
  • 1 whole lime, juiced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin

Method
 

Cooking the Shrimp
  1. In a medium-sized bowl, combine the shrimp, olive oil, chili powder, salt, and pepper until well-coated.
  2. Heat a skillet over medium heat and add the seasoned shrimp. Cook for about 2-3 minutes on each side, or until the shrimp turn pink and opaque.
Making the Cilantro Lime Cream
  1. In a separate bowl, mix the sour cream, lime juice, garlic powder, and cumin until smooth and creamy.
Assembling the Tacos
  1. Warm the corn tortillas in a pan or microwave for about 15-20 seconds until pliable.
  2. Assemble the tacos by placing a few shrimp on each tortilla. Top with shredded cabbage, avocado slices, and a generous drizzle of cilantro lime cream.
  3. Garnish with fresh cilantro and serve immediately.
