  • 1 pound shrimp, peeled and deveined Fresh shrimp is recommended for the best flavor.
  • 1 bunch asparagus, trimmed and cut into bite-sized pieces
  • 8 ounces mushrooms, sliced
  • 3 cloves garlic, minced
Sauce and Seasoning
  • 2 tablespoons soy sauce Can substitute with tamari for gluten-free.
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Method
 

Preparation
  1. Heat olive oil in a large skillet over medium-high heat until shimmering.
  2. Add minced garlic and sauté for about 30 seconds until fragrant.
Cooking
  1. Add shrimp to the skillet and cook for 2-3 minutes, stirring until they turn pink and opaque.
  2. Add asparagus and mushrooms, stir-fry for an additional 3-5 minutes until asparagus is crisp-tender.
  3. Pour in soy sauce and season with salt and pepper. Toss to combine and cook for another minute.
  4. Serve hot from the skillet, garnished with sesame seeds or green onions if desired.

Notes

For best results, use fresh ingredients. Leftovers can be stored in an airtight container for 2-3 days. Consider serving with steamed rice or quinoa.
