Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the diced sweet potatoes, chopped red and yellow bell peppers, and sliced red onion.
  3. Toss in the chopped bacon, olive oil, garlic powder, smoked paprika, salt, and pepper. Mix until everything is evenly coated.
  4. Spread the mixture in a single layer on a sheet pan.
Cooking
  1. Roast in the oven for 25-30 minutes, stirring halfway through.
  2. Once tender and the bacon is crispy, garnish with fresh herbs if desired. Serve warm.

Notes

For best results, cut vegetables into uniform sizes. You can make this dish vegetarian by omitting bacon and adding chickpeas.
