  • 4 pieces salmon fillets (about 6 oz each) Look for fresh, bright fillets.
  • 2 medium sweet potatoes, peeled and cut into 1/2-inch cubes Packed with vitamins!
  • 3 cups broccoli florets A great source of fiber and nutrients.
  • 2 tablespoons olive oil Use high-quality olive oil for best results.
  • 1 teaspoon garlic powder Provides instant flavor boost.
  • 1 teaspoon paprika Adds color and subtle smoky flavor.
  • to taste salt and pepper Essential seasonings.
  • 1 lemon, sliced (optional for garnish) Adds zing when squeezed over the dish.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper or foil.
  2. In a large bowl, toss the sweet potato cubes with 1 tablespoon of olive oil, half of the garlic powder, paprika, salt, and pepper. Spread them out on your lined sheet pan and roast for about 15 minutes.
  3. Season your salmon fillets with salt, pepper, and the remaining garlic powder and paprika.
  4. After the sweet potatoes have roasted for 15 minutes, carefully remove the pan from the oven. Push the sweet potatoes to one side, and add the broccoli florets and salmon onto the sheet. Drizzle the remaining olive oil over the broccoli.
  5. Return the pan to the oven and roast for another 12-15 minutes until the salmon flakes easily with a fork and the veggies are tender.
  6. Remove the pan from the oven and garnish with lemon slices and chopped parsley if desired. Serve warm.

Notes

Don’t crowd the pan to ensure roasting. Use a meat thermometer for salmon at 145°F (63°C). Experiment with fresh herbs.
