Ingredients
  

For the filling
  • 2 packages vanilla instant pudding mix (3.4 oz each)
  • 2 cups milk (skim)
  • 8 oz Cool Whip (thawed or homemade)
  • 1/2 tsp mint extract Adjust to taste
  • 16 drops green food coloring Use as needed for desired color
For assembly
  • 1 pre-made graham cracker crust

Method
 

Preparation
  1. In a large bowl, mix together the pudding mixes and the milk until well combined.
  2. Add the Cool Whip, mint extract, and green food coloring to the bowl and stir until everything is mixed well.
  3. Pour the fluffy mixture into the premade graham cracker crust.
  4. Refrigerate until the pie is completely set, about four hours or overnight.
Serving
  1. When ready to serve, add whipped cream on top and finish with a cherry.

Notes

Store leftovers covered in plastic wrap or aluminum foil in the refrigerator for up to five days. For a richer flavor, use homemade whipped cream. If desired, add crushed Oreo cookies to the filling or substitute chocolate pudding for vanilla.
