Preparation
- Scoop the sorbet into a large bowl.
- Add one-half of the Prosecco and whisk until you have a smooth icy mixture.
- Whisk in the cold vodka and the remaining Prosecco until the cocktail is very slushy.
- Pour into champagne flutes or other cocktail glasses.
- Garnish with fresh mint and a few blueberries.
- If serving as a dessert, place a scoop of lemon sorbet in a parfait glass or white wine glass and pour the sgroppino cocktail over it.
Notes
Sgroppino is best enjoyed fresh. Store the undiluted mixture (sorbet and vodka) in the freezer for a short time. Give it a good whisk again before serving. Experiment with different flavors of sorbet for a fun twist.
