Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Cut the cauliflower into bite-sized florets.
  3. In a large bowl, mix together the olive oil, salt, harissa, pepper, tahini, honey, and lemon juice.
  4. Add the cauliflower florets to the bowl and toss them until they are well-coated with the mixture.
  5. Spread the cauliflower evenly on a baking sheet lined with parchment paper.
  6. Roast in the oven for about 25-30 minutes, or until the cauliflower is golden brown and tender.
  7. Once done, remove the baking sheet from the oven and sprinkle with fresh chopped parsley before serving.

Notes

Make sure to cut the cauliflower into uniform pieces to ensure even roasting. Taste the tahini-honey mixture before adding it to the cauliflower to adjust flavors as needed. If you like a crunchier texture, roast for a few extra minutes, keeping a close watch to avoid burning.
