- In a skillet, cook the sausage over medium heat until browned. Drain excess fat.
- In a large bowl, combine the cooked sausage, diced potatoes, bell peppers, and any additional ingredients.
- In another bowl, whisk together the eggs, milk, salt, and pepper.
- Grease a baking dish and layer the sausage mixture, then pour the egg mixture on top.
- Sprinkle cheese over everything.
- Cover and refrigerate overnight.
Baking
- Preheat the oven to 350°F (175°C) and bake for 45-55 minutes or until the eggs are set and the top is golden brown.
- Let cool a few minutes before serving.
Notes
Serve warm, cut into squares. Pairs well with fresh fruit or a light salad. Add hot sauce or ketchup for extra flavor. Store leftovers in the refrigerator for up to 3-4 days, or freeze for up to 2 months. To reheat, thaw overnight in the fridge.
