  • 1 pound breakfast sausage
  • 4 cups diced potatoes Frozen diced potatoes can be used.
  • 1 cup bell peppers, diced
  • 6 large eggs
  • 1 cup milk
  • 2 cups shredded cheese (cheddar or your choice) Different cheeses can be used.
  • Salt and pepper to taste
  • Optional: diced onions, spices, or herbs Feel free to customize.

Method
 

Preparation
  1. In a skillet, cook the sausage over medium heat until browned. Drain excess fat.
  2. In a large bowl, combine the cooked sausage, diced potatoes, bell peppers, and any additional ingredients.
  3. In another bowl, whisk together the eggs, milk, salt, and pepper.
  4. Grease a baking dish and layer the sausage mixture, then pour the egg mixture on top.
  5. Sprinkle cheese over everything.
  6. Cover and refrigerate overnight.
Baking
  1. Preheat the oven to 350°F (175°C) and bake for 45-55 minutes or until the eggs are set and the top is golden brown.
  2. Let cool a few minutes before serving.

Notes

Serve warm, cut into squares. Pairs well with fresh fruit or a light salad. Add hot sauce or ketchup for extra flavor. Store leftovers in the refrigerator for up to 3-4 days, or freeze for up to 2 months. To reheat, thaw overnight in the fridge.
