Salmon Loaf Ingredients
  • 1 can salmon 14.75 oz, drained and flaked
  • 1 cup breadcrumbs
  • 2 large eggs beaten
  • 1/2 cup milk
  • 1/4 cup onion finely chopped
  • 2 tbsp lemon juice freshly squeezed
  • 1 tbsp parsley chopped
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Creamed Peas Ingredients
  • 2 cups peas fresh or frozen
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • salt and pepper to taste

Method
 

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine flaked salmon, breadcrumbs, beaten eggs, milk, onion, lemon juice, parsley, mustard, salt, and black pepper. Mix well.
  3. Transfer the mixture into the prepared loaf pan and press it down evenly.
  4. Bake for 45-50 minutes or until the top is golden and firm. Let it rest for 5 minutes before slicing.
  5. For creamed peas, cook the peas in salted boiling water for 5 minutes if fresh, or as per package instructions if frozen. Drain and set aside.
  6. In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually add milk, stirring constantly, until thickened.
  7. Add cooked peas to the sauce, stir, and season with salt and pepper to taste.
  8. Serve slices of salmon loaf with a generous portion of creamed peas on the side.

Notes

For a lighter version, use Greek yogurt instead of milk in the salmon loaf. Try adding grated cheese to the creamed peas for extra richness.
