- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, combine flaked salmon, breadcrumbs, beaten eggs, milk, onion, lemon juice, parsley, mustard, salt, and black pepper. Mix well.
- Transfer the mixture into the prepared loaf pan and press it down evenly.
- Bake for 45-50 minutes or until the top is golden and firm. Let it rest for 5 minutes before slicing.
- For creamed peas, cook the peas in salted boiling water for 5 minutes if fresh, or as per package instructions if frozen. Drain and set aside.
- In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually add milk, stirring constantly, until thickened.
- Add cooked peas to the sauce, stir, and season with salt and pepper to taste.
- Serve slices of salmon loaf with a generous portion of creamed peas on the side.
Notes
For a lighter version, use Greek yogurt instead of milk in the salmon loaf. Try adding grated cheese to the creamed peas for extra richness.
