Salmon Loaf Ingredients

  • 1 can salmon 14.75 oz, drained and flaked
  • 1 cup breadcrumbs
  • 2 large eggs beaten
  • 1/2 cup milk
  • 1/4 cup onion finely chopped
  • 2 tbsp lemon juice freshly squeezed
  • 1 tbsp parsley chopped
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Creamed Peas Ingredients

  • 2 cups peas fresh or frozen
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • salt and pepper to taste

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a loaf pan.
  • In a large bowl, combine flaked salmon, breadcrumbs, beaten eggs, milk, onion, lemon juice, parsley, mustard, salt, and black pepper. Mix well.
  • Transfer the mixture into the prepared loaf pan and press it down evenly.
  • Bake for 45-50 minutes or until the top is golden and firm. Let it rest for 5 minutes before slicing.
  • For creamed peas, cook the peas in salted boiling water for 5 minutes if fresh, or as per package instructions if frozen. Drain and set aside.
  • In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually add milk, stirring constantly, until thickened.
  • Add cooked peas to the sauce, stir, and season with salt and pepper to taste.
  • Serve slices of salmon loaf with a generous portion of creamed peas on the side.

Notes

For a lighter version, use Greek yogurt instead of milk in the salmon loaf. Try adding grated cheese to the creamed peas for extra richness.
