Preparation
- Mix Dijon mustard, apple cider vinegar, paprika, and a pinch of salt together to create a spice mixture.
- Coat the chicken thighs with the spice mixture.
- Place the coated chicken on a sheet pan.
Cooking
- Preheat the oven and roast the chicken thighs until cooked through (about 30-35 minutes).
- While the chicken is baking, melt butter in a saucepan and mix in apple cider, brown sugar, Dijon mustard, and apple cider vinegar to create the glaze.
- Mix cornstarch with melted butter before adding to the glaze to prevent clumps.
- Brush the thickened glaze onto the chicken during the last 5-10 minutes of baking.
- Return the chicken to the oven for a few additional minutes to help the glaze cling and caramelize.
Notes
For extra flavor, marinate the chicken thighs in the spice mixture overnight. Be sure to monitor the chicken during the last few minutes to avoid burning the glaze. Bone-in chicken thighs can also be used but will require extra cooking time. chopped fresh herbs like rosemary or thyme can be added for additional flavor.
