  • 1 bunch asparagus, trimmed Choose thin asparagus for the best texture
  • 3 large carrots, sliced into long, thin pieces
Seasoning and Toppings
  • 1 tablespoon olive oil

Method
 

Preparation
  1. Preheat the oven to 400 degrees F.
  2. Line a baking sheet with parchment paper.
  3. Arrange the asparagus stalks and carrot pieces in an even layer.
  4. Drizzle with olive oil and toss until lightly coated.
  5. Season with salt and pepper.
Roasting
  1. Roast for about 20 to 25 minutes, until tender and slightly browned.
Serving
  1. Serve warm, sprinkled with goat cheese and lemon zest.

Notes
