Preparation
- Fill a shallow dish with warm water and soak each rice paper sheet for about 15-20 seconds until pliable but not too soft.
- Place the softened sheet on a clean, flat surface or cutting board.
- On the lower third of the rice paper, arrange shrimp or chicken, rice noodles, lettuce, fresh herbs, and sliced veggies.
- Fold the sides over your filling tightly and roll from the bottom to the top.
- Repeat the process with the remaining ingredients until all rolls are made.
Serving
- Arrange the rolls on a platter and serve with your choice of dipping sauce.
Notes
For best results, prep all ingredients ahead of time. If you tear a rice paper sheet, layer another on top. Store in an airtight container with a damp paper towel for freshness.
