  • 8 sheets Rice paper sheets Look for the thin, pliable kind.
  • 1 cup Cooked shrimp or chicken, sliced Don't overcook shrimp; they can turn rubbery.
Noodles and Vegetables
  • 1 cup Rice noodles Cook until tender.
  • 2 cups Lettuce (butter or romaine) Adds a nice crunch.
  • 1 cup Mixed vegetables (carrots, cucumber, bell peppers), julienned Bright colors enhance nutrition.
Herbs and Sauce
  • 1 cup Fresh herbs (mint, cilantro, basil) Essential for flavor.
  • 1 cup Dipping sauce (hoisin, peanut, or soy sauce) Mix sauces for a twist.

Method
 

Preparation
  1. Fill a shallow dish with warm water and soak each rice paper sheet for about 15-20 seconds until pliable but not too soft.
  2. Place the softened sheet on a clean, flat surface or cutting board.
  3. On the lower third of the rice paper, arrange shrimp or chicken, rice noodles, lettuce, fresh herbs, and sliced veggies.
  4. Fold the sides over your filling tightly and roll from the bottom to the top.
  5. Repeat the process with the remaining ingredients until all rolls are made.
Serving
  1. Arrange the rolls on a platter and serve with your choice of dipping sauce.

Notes

For best results, prep all ingredients ahead of time. If you tear a rice paper sheet, layer another on top. Store in an airtight container with a damp paper towel for freshness.
