Ingredients
  

For the crust
  • 1 cup all-purpose flour For crust
  • 1/4 cup powdered sugar For crust
  • 1/2 cup unsalted butter, softened For crust
For the filling
  • 2 cups rhubarb, chopped Fresh or thawed frozen rhubarb
  • 1 cup granulated sugar For filling
  • 3 large eggs Best at room temperature
  • 1/4 cup all-purpose flour For filling
  • 1 teaspoon vanilla extract For filling
  • 1/4 teaspoon salt For filling

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking dish.
  2. In a medium bowl, combine 1 cup of all-purpose flour and powdered sugar. Cut in the softened butter until the mixture resembles coarse crumbs.
  3. Press this mixture firmly into the bottom of the prepared baking dish.
Baking
  1. Bake the crust in the preheated oven for 15 minutes until lightly golden.
  2. While the crust is baking, mix together the rhubarb, granulated sugar, eggs, 1/4 cup of flour, vanilla extract, and salt in a separate bowl.
  3. Once the crust has baked, pour the rhubarb mixture evenly over it. Bake for an additional 25-30 minutes, or until filling is set.
Cooling and Serving
  1. Allow the dish to cool completely on a wire rack before slicing.
  2. Slice into bars and serve with whipped cream or vanilla ice cream if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to five days. Freeze for longer storage, wrap tightly to avoid freezer burn.
