For the filling

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix the flour, cocoa powder, baking soda, and salt.
  3. In another bowl, beat together the sugar, oil, buttermilk, eggs, food coloring, and vanilla.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Drop tablespoons of batter onto the prepared baking sheet, spacing them apart.
Baking
  1. Bake for about 10-12 minutes until they spring back when touched.
  2. Allow to cool completely.
Filling Preparation
  1. For the filling, beat together the softened butter, cream cheese, and powdered sugar until smooth.
  2. Spread a generous amount of filling between two whoopie pie halves to create sandwiches.
