Ingredients
  

For the Salad
  • 5-6 ounces Spring lettuce mix Rinsed and dried
  • 12 oz fresh raspberries Carefully added on top
  • 1/3 cup chopped walnuts Can be toasted for better flavor
  • 1/3 cup feta cheese, crumbled Can swap with goat cheese if desired
For the Dressing
  • 1 1/2 tablespoons raspberry preserves Can substitute with balsamic vinegar for a twist
  • 1 tablespoon finely chopped shallot
  • 2 teaspoons lemon juice
  • 1/4 teaspoon salt
  • 1/2 cup extra virgin olive oil Added gradually while whisking

Method
 

Preparation
  1. Rinse the spring lettuce mix under cold water, shake gently to remove excess moisture, and place it in a large salad bowl.
  2. Add the fresh raspberries over the lettuce, scattering them evenly.
  3. Sprinkle the chopped walnuts and crumbled feta cheese on top.
Making the Dressing
  1. In a small bowl, combine the raspberry preserves, finely chopped shallot, lemon juice, and salt.
  2. Whisk these together until smooth.
  3. Gradually pour in the extra virgin olive oil while whisking continuously until well combined and emulsified.
Serving
  1. Drizzle the dressing over the salad just before serving.
  2. Toss gently to combine, ensuring that the ingredients are well coated.
  3. Serve immediately, ideally chilled or at room temperature.

Notes

For best taste, serve chilled or at room temperature. Pair with grilled chicken or salmon for a light main course. Can be prepared ahead but keep dressing separate until serving.
