Ingredients

Main ingredients
  • 1 cup unsalted butter, softened Softening the butter allows for a light and fluffy texture.
  • 1/2 cup powdered sugar This adds a melt-in-your-mouth quality.
  • 1 teaspoon vanilla extract A splash of vanilla adds warmth and depth.
  • 2 cups all-purpose flour Be sure to spoon and level the flour when measuring.
  • 1/4 teaspoon salt Just a pinch enhances all the sweet flavors.
  • 1/2 cup raspberry jam Choose a quality jam for the best flavor.

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Stir in the vanilla extract.
  4. Gradually add the flour and salt, mixing until everything is just combined.
  5. Scoop the dough out onto a floured surface and roll it into a log shape.
  6. Flatten the top of the log and spread the raspberry jam evenly across the dough.
  7. Carefully roll the dough tightly, ensuring the jam is swirled in.
  8. Wrap the log in plastic wrap and chill for about 30 minutes.
  9. Once chilled, slice the dough into rounds and place them on a baking sheet lined with parchment paper.
Baking
  1. Bake for 12-15 minutes or until the edges are lightly golden.
  2. Allow the cookies to cool on the sheet for a few minutes before transferring them to a wire rack.

Notes

Chilling the dough helps to solidify the butter for perfectly shaped cookies. Use quality ingredients for the best flavor. Experiment with different jams or add spices for a unique twist.
