Ingredients
  

For the Bellini
  • 1 cup Fresh raspberries Choose plump, juicy berries for the best flavor.
  • 1 cup Peach purée Store-bought or fresh blended peaches work well.
  • 1 bottle Champagne Use your favorite bubbly.
  • 1 tablespoon Sugar Optional for a sweeter taste.
  • few leaves Mint leaves For garnish.

Method
 

Preparation
  1. Blend the fresh raspberries in a blender until smooth. Strain through a fine sieve if desired.
  2. In a glass, combine 1 part raspberry puree with 1 part peach purée.
  3. Gently pour in the chilled champagne to fill the glass.
  4. Stir gently to mix the flavors.
  5. Garnish with fresh raspberries and a sprig of mint.
  6. Serve immediately and enjoy.

Notes

Chill your champagne beforehand, and feel free to adjust the sweetness of your puree to taste.
