Preparation
- Blend the fresh raspberries in a blender until smooth. Strain through a fine sieve if desired.
- In a glass, combine 1 part raspberry puree with 1 part peach purée.
- Gently pour in the chilled champagne to fill the glass.
- Stir gently to mix the flavors.
- Garnish with fresh raspberries and a sprig of mint.
- Serve immediately and enjoy.
Notes
Chill your champagne beforehand, and feel free to adjust the sweetness of your puree to taste.
