  • 1 loaf loaf of bread Use challah or brioche for richer flavor.
  • 2 cups fresh blueberries Can substitute with other fruits like strawberries or raspberries.
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup maple syrup Optional: additional for serving.
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Butter for greasing the dish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13 inch baking dish with butter.
  3. Tear the bread into chunks and spread half of it in the greased dish.
  4. Sprinkle half of the blueberries over the bread.
  5. Repeat with the remaining bread and blueberries.
  6. In a bowl, whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, and salt.
  7. Pour the egg mixture evenly over the bread and blueberries.
  8. Let it soak for about 30 minutes.
Baking
  1. Bake in the preheated oven for 45-50 minutes, or until set and golden.
  2. Serve warm, optionally drizzled with additional maple syrup.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in the oven or microwave. For extra flavor, add nuts or prepare the casserole the night before.
