Preparation
  1. In a food processor, add the feta cheese and Greek yogurt. Blend until you have a smooth, creamy mixture, scraping down the sides as needed.
  2. Add the pumpkin puree, honey, thyme, and black pepper. Blend again until all flavors are well combined.
Chill
  1. Transfer the whipped feta to a bowl, cover, and chill in the fridge for 30-60 minutes to let flavors mingle.
Serve
  1. Garnish with chopped walnuts, fresh thyme, an extra drizzle of honey, and more black pepper before serving with toasted bread or crackers.
