Method
Preparation
- Preheat your oven to 350°F (175°C) while you gather your ingredients.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until it’s light and fluffy.
- Add in the egg and vanilla extract, mixing well.
- In another bowl, whisk together the flour, baking powder, cinnamon, and a pinch of salt.
- Carefully fold the dry mix into your wet ingredients, alternating with the pumpkin puree.
Shaping and Baking
- Lightly flour your working surface and roll out the dough to your desired thickness.
- Use cookie cutters to shape the dough into pumpkins, bats, or other spooky shapes.
- Place the shaped cookies on a parchment-lined baking sheet.
- Bake for 12-15 minutes until lightly golden.
Decorating
- Once cooled, decorate with icing or festive toppings as desired.
Notes
Chill the dough for 30 minutes if it’s too sticky to work with. Use different spices like nutmeg or ginger for a twist. Keep an eye on the cookies while baking, as every oven is different.
