Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the Greek yogurt, nut butter, honey, and vanilla extract until smooth.
- In another bowl, combine the rolled oats, protein powder, and baking soda.
- Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
- If desired, fold in chocolate chips or nuts.
- Drop spoonfuls of cookie dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes until the edges are lightly golden.
- Allow to cool before enjoying your healthy cookies.
Notes
Chill the dough for 15-20 minutes if sticky. Use a spatula to lift cookies gently from the parchment.
