Ingredients
  

Noodles and Oil
  • 8 oz wide Lo Mein noodles, cooked and rinsed Lo Mein noodles can be found in most grocery stores, usually in the Asian food aisle.
  • 1 tbsp peanut oil For cooking the pork.
Main Ingredients
  • 1 lb ground pork Can substitute with ground chicken or turkey.
  • 4 cups coleslaw mix Add freshness and crunch to the dish.
  • 1/4 cup sliced green onions Divided, use some for garnish.
Sauce Ingredients
  • 1/2 cup low-sodium chicken broth
  • 3 tbsp mirin Can substitute with a mix of white wine and sugar.
  • 2 tbsp dark soy sauce
  • 1 tbsp minced garlic
  • 2 tsp grated ginger
  • 1 tsp sesame oil
  • 1/2 tsp sriracha

Method
 

Cooking the Noodles
  1. Cook the Lo Mein noodles according to package instructions until tender, about 5-7 minutes. Rinse under cold water and set aside.
Browning the Pork
  1. In a large skillet over medium-high heat, add the peanut oil. Once hot, add ground pork and 1/4 cup of sliced green onions. Cook for 5-7 minutes until browned and cooked through.
Making the Sauce
  1. In a separate bowl, whisk together chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha.
Combining Ingredients
  1. Add cooked noodles, coleslaw mix, and prepared sauce to the skillet with pork. Toss for 2-3 minutes until everything is well coated and the coleslaw mix has wilted slightly.
Serving
  1. Plate the noodle bowl and garnish with remaining sliced green onions. Serve hot.

Notes

Serve hot and consider garnishing with sesame seeds or extra sriracha. Store leftovers in an airtight container for up to 3 days.
