Ingredients

  • 3 tablespoons vegetable oil
  • 2 pieces shallots (thinly sliced)
  • 7 cloves garlic (sliced)
  • 3 pieces Thai bird or holland chilies (de-seeded and thinly sliced)
  • 1 pound ground pork (450g)
  • 1 teaspoon sugar
  • 1 tablespoon fish sauce
  • 1 tablespoon thin/light soy sauce
  • 2 teaspoons dark soy sauce
  • 2 teaspoons oyster sauce
  • 1/3 cup low sodium chicken broth or water
  • 1.5 cups holy basil leaves (packed)

Method
 

Preparation
  1. In a wok over medium high heat, add the oil, shallots, and garlic. Fry for 3 minutes until fragrant.
  2. Add the chilies and cook for another minute.
Cooking
  1. Crank up the heat to high, and add the ground pork. Break it up into small bits and let it crisp up.
  2. Add sugar, fish sauce, thin/light soy sauce, dark soy sauce, and oyster sauce. Stir-fry for another minute.
  3. Deglaze the pan with the chicken broth or water. The liquid should cook off quickly due to the high heat.
  4. Finally, add the holy basil leaves and stir-fry until they are wilted.
Serving
  1. Serve the Pork & Holy Basil Stir-Fry over rice, optionally topped with a fried egg and garnished with fresh basil or sliced chilies.

Notes

Use fresh holy basil for the best flavor. You can store leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, warm in a pan or microwave. Adjust the amount of chilies for desired spice level.
