Preparation
- Preheat the oven to 200 degrees F (95 degrees C).
- In a small bowl, mix together the thyme, sage, salt, and pepper. Rub this mixture evenly over the pork chops.
Cooking
- In a nonstick skillet, melt the butter and olive oil over medium heat.
- Cook the pork chops in the skillet until a meat thermometer reads 145 degrees F (63 degrees C), approximately 4 to 5 minutes per side.
- Once cooked, transfer the pork chops to an oven-safe plate and keep them warm in the oven.
Making the Sauce
- In the same skillet, combine the raspberry jam, orange juice, and white wine vinegar. Bring this mixture to a boil and cook until it reduces to your desired thickness, about 2 to 3 minutes.
Serving
- Spoon the sauce onto a serving plate, place the pork chops on top, and garnish with fresh thyme sprigs if desired.
Notes
For extra flavor, marinate the pork chops in the seasoning mix for a few hours or overnight. Use a meat thermometer to ensure the pork is cooked perfectly. If you like a thicker sauce, continue to simmer it for a bit longer until it reaches your preferred consistency.
