Ingredients
  

Seasoning Mix
  • 1/2 teaspoon dried thyme, crushed
  • 1/2 teaspoon dried sage, crushed
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
Pork Chops
  • 4 pieces boneless pork loin chops (4 ounces each) Bone-in chops may require longer cooking time.
  • 1 tablespoon butter
  • 1 tablespoon olive oil
Raspberry Sauce
  • 1/4 cup seedless raspberry jam Other fruit jams can be used as substitutes.
  • 2 tablespoons orange juice
  • 2 tablespoons white wine vinegar
  • 4 sprigs fresh thyme (optional) For garnish.

Method
 

Preparation
  1. Preheat the oven to 200 degrees F (95 degrees C).
  2. In a small bowl, mix together the thyme, sage, salt, and pepper. Rub this mixture evenly over the pork chops.
Cooking
  1. In a nonstick skillet, melt the butter and olive oil over medium heat.
  2. Cook the pork chops in the skillet until a meat thermometer reads 145 degrees F (63 degrees C), approximately 4 to 5 minutes per side.
  3. Once cooked, transfer the pork chops to an oven-safe plate and keep them warm in the oven.
Making the Sauce
  1. In the same skillet, combine the raspberry jam, orange juice, and white wine vinegar. Bring this mixture to a boil and cook until it reduces to your desired thickness, about 2 to 3 minutes.
Serving
  1. Spoon the sauce onto a serving plate, place the pork chops on top, and garnish with fresh thyme sprigs if desired.

Notes

For extra flavor, marinate the pork chops in the seasoning mix for a few hours or overnight. Use a meat thermometer to ensure the pork is cooked perfectly. If you like a thicker sauce, continue to simmer it for a bit longer until it reaches your preferred consistency.
