Pizza Pot Pies

Pizza Pot Pies are a fun twist on traditional pizza, combining classic flavors with the comfort of a warm pot pie. They're hearty, easy to make, and everyone can customize their own filling.

Ingredients
  

For the dough
  • 2 cups all-purpose flour, more or less as needed
  • 1 envelope Fleischmann's Pizza Crust Yeast
  • 1.5 teaspoons sugar
  • 0.75 teaspoons salt
  • 2/3 cup very warm water Make sure it's warm but not too hot.
  • 3 tablespoons oil For greasing and dough.
For the filling
  • 1.5 cups pizza sauce
  • 1 teaspoon minced garlic
  • 1.5 teaspoons Italian seasoning, divided
  • 1 pound ground Italian sausage, browned
  • 1 cup mushrooms, thinly sliced
  • 10 slices Canadian Bacon, chopped
  • to taste Fresh basil, for topping
  • Mozzarella cheese, sliced For lining ramekins.

Method
 

Preparation
  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Generously grease four large (5-inch) ramekins with oil or butter.
  3. In a large bowl, combine 1 cup of flour, undissolved yeast, sugar, and salt.
  4. Add very warm water and oil to the mixture, and mix well for about 1 minute.
  5. Gradually add enough of the remaining flour to form a soft dough.
  6. Knead the dough until it is smooth and elastic (this takes about 4 minutes).
  7. Divide the dough into four portions and roll each into a 6-inch circle.
Assembly
  1. Line the inside of each ramekin with mozzarella cheese.
  2. Fill each ramekin with the browned Italian sausage, mushrooms, and chopped Canadian bacon.
  3. In a separate bowl, mix the pizza sauce, minced garlic, and 1 teaspoon of Italian seasoning, and pour it over the fillings.
  4. Cover each ramekin with the pizza dough, stretching to fit and sealing the edges.
Baking
  1. Bake for 12-15 minutes until the crusts are golden brown.
  2. Turn the pot pies over onto plates, garnish with the remaining Italian seasoning and fresh basil, and serve.

Notes

If you have leftovers, let them cool completely before storing. Place them in an airtight container and refrigerate for up to 3 days. To reheat, simply place them in the oven at 350 degrees until heated through. Feel free to add different toppings like peppers, olives, or onions based on your taste.
