Pinto Beans Preparation
  • 1 cup dried pinto beans Soaked for better texture.
  • 4 cups broth (vegetable, chicken, or beef) Use for cooking instead of water.
  • 2 tablespoons olive oil For sautéing aromatics.
  • 1 medium onion (diced) For flavor base.
  • 2 cloves garlic (minced) Enhances taste.

Method
 

Preparation
  1. Soak dried pinto beans overnight or use the quick soak method by boiling them for 2 minutes, then letting them sit for an hour.
  2. Rinse and drain the beans after soaking.
Cooking Beans
  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until golden.
  2. Add minced garlic and sauté for an additional minute.
  3. Stir in the soaked pinto beans and add broth to the pot.
  4. Add the homemade seasoning mix and bay leaf.
  5. Bring to a simmer, then reduce heat and cover, cooking for 1.5 to 2 hours or until the beans are tender.
  6. Adjust seasoning to taste before serving, and remove the bay leaf.

Notes

Store any leftover seasoning mix in an airtight container for up to six months. For deeper flavor, consider layering spices at different stages of cooking.
