  • 3 pieces boneless skinless chicken breasts, cut into 1-inch pieces
  • 2 tsp vegetable oil
  • 1/2 tsp salt
  • 1 tsp pepper
  • 1 piece red bell pepper, cut into 1-inch pieces
  • 1 cup pineapple chunks (fresh or canned)
  • 1 Tbsp minced garlic
  • 1/2 tsp ground ginger
  • 1/2 cup pineapple juice
  • 1/3 cup soy sauce
  • 1/3 cup chicken broth
  • 1/4 cup hoisin sauce
  • 1/4 cup brown sugar
  • 2 tsp cornstarch
  • 1 Tbsp sesame seeds
  • 2 pieces green onions, sliced

Method
 

Preparation
  1. Heat the oil in a large skillet over medium heat.
  2. Add the chicken and season with salt and pepper. Cook for 4-6 minutes, stirring occasionally, until cooked through.
  3. Add the red bell pepper and pineapple to the skillet. Cook for 3-5 minutes until the pepper is tender.
Sauce Preparation
  1. In a small bowl, combine pineapple juice, soy sauce, chicken broth, hoisin sauce, brown sugar, minced garlic, ground ginger, and cornstarch. Whisk until combined.
  2. Pour this mixture into the skillet and bring to a low simmer. Cook for 1-2 minutes until the sauce has thickened.
  3. Remove from heat and serve topped with sesame seeds and green onions.

Notes

For extra flavor, marinate the chicken in the soy sauce and pineapple juice mixture for 30 minutes before cooking. You can use fresh pineapple for a sweeter taste. Adjust the sweetness by adding more or less brown sugar to the sauce.
