  • 1 20-ounce can Canned pineapple chunks, drained Use one can of chunks and one can of crushed pineapple.
  • 1 20-ounce can Canned crushed pineapple, drained
  • 2 cups Sharp cheddar cheese, shredded Alternatively, you can try different cheeses.
  • 1/2 cup Granulated sugar Can reduce based on preference.
  • 1/3 cup All-purpose flour
  • 40 crackers Buttery round crackers, crushed Ritz crackers work well.
  • 1/2 cup Unsalted butter, melted One stick.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the drained pineapple chunks and crushed pineapple.
  3. Add the shredded sharp cheddar cheese to the pineapple mixture.
  4. In a separate bowl, whisk together granulated sugar and all-purpose flour. Sprinkle this mixture over the pineapple and cheese, stirring gently until combined.
  5. Transfer the pineapple mixture into a 1.5-quart casserole dish, spreading it evenly.
  6. In a medium bowl, mix the crushed buttery round crackers with the melted butter. Ensure the crumbs are well coated.
  7. Sprinkle the buttery cracker mixture evenly over the pineapple mixture in the casserole dish.
  8. Bake in the preheated oven for approximately 30 minutes, or until the topping is golden brown and bubbly.
  9. Remove from the oven and let it cool slightly before serving.

Notes

For added texture, consider mixing in chopped pecans or shredded coconut with the cracker topping. Keep an eye on the casserole while baking to avoid overbaking.
