Main ingredients
  • 12 oz cheese tortellini
  • 1 tablespoon olive oil
  • 12 oz boneless skinless chicken breasts, cut into bite-size pieces
  • 1/2 cup basil pesto store-bought or homemade
  • 1 1/2 cups halved grape tomatoes
  • 1/4 cup chopped basil
  • Kosher salt and black pepper, to taste
  • Fresh basil and Parmesan cheese, for garnish (optional) optional garnish

Method
 

Cooking the Tortellini
  1. Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions. When finished, drain the tortellini in a colander.
Cooking the Chicken
  1. Meanwhile, heat olive oil in a large skillet over medium-high heat. Add the chicken to the pan and season with salt and pepper. Cook, stirring occasionally, until the chicken is browned and cooked through, about 4-5 minutes.
Combining Ingredients
  1. In a large bowl, combine the cooked tortellini, chicken pieces, and halved grape tomatoes.
  2. Gently stir in the basil pesto until everything is well coated. Add freshly chopped basil and season to taste with salt and pepper.
Serving
  1. Garnish with fresh basil and Parmesan cheese, if desired.

Notes

Make sure to not overcook the tortellini; they should be al dente for the best texture. You can add other vegetables like spinach or bell peppers for extra nutrition.
