Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, cream the softened butter and sugar together until light and fluffy (about 2-3 minutes).
- Beat in the egg and vanilla extract until fully incorporated.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- If desired, divide the dough into portions and add food coloring.
- Roll out the dough on a floured surface to about 1/4 inch thick.
- Use a bunny-shaped cookie cutter to cut out shapes.
Baking
- Place the cookies on a baking sheet lined with parchment paper.
- Bake for 8-10 minutes or until the edges are lightly golden.
- Let the cookies cool completely before decorating with buttercream and Peeps.
Notes
Store cookies in an airtight container at room temperature for up to 5 days or freeze for up to 3 months. When ready to enjoy, thaw in the fridge or at room temperature.
