  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • Food coloring (optional)

  • Buttercream frosting

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In a separate bowl, cream the softened butter and sugar together until light and fluffy (about 2-3 minutes).
  4. Beat in the egg and vanilla extract until fully incorporated.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  6. If desired, divide the dough into portions and add food coloring.
  7. Roll out the dough on a floured surface to about 1/4 inch thick.
  8. Use a bunny-shaped cookie cutter to cut out shapes.
Baking
  1. Place the cookies on a baking sheet lined with parchment paper.
  2. Bake for 8-10 minutes or until the edges are lightly golden.
  3. Let the cookies cool completely before decorating with buttercream and Peeps.

Notes

Store cookies in an airtight container at room temperature for up to 5 days or freeze for up to 3 months. When ready to enjoy, thaw in the fridge or at room temperature.
