  • 1 cup unsalted butter, softened Make sure the butter is softened for easy mixing.
  • 2 cups all-purpose flour You can try using almond flour for a gluten-free version, but the texture may change slightly.
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans For added flavor, you can toast the pecans before adding them to the dough.
  • 1/2 teaspoon salt You can use salted butter, but omit the added salt.

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream the softened butter and powdered sugar until smooth.
  3. Stir in the vanilla extract.
  4. Gradually add the flour and salt, mixing until combined.
  5. Fold in the chopped pecans.
Baking
  1. Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
  2. Flatten each ball slightly with your hand.
  3. Bake for 12-15 minutes or until the edges are golden.
  4. Allow to cool before serving.

Notes

These cookies can be enjoyed warm or at room temperature. Serve on a nice plate, perfect with coffee, tea, or milk. You can add a dusting of powdered sugar on top for extra sweetness. To keep your Pecan Sandies fresh, store them in an airtight container. They can last up to one week at room temperature. If you want them to last longer, freeze them, separating with parchment paper.
