  • 2 pieces eggs
  • 1 cup peanut butter Use creamy for a smoother texture, or chunky for added crunch.
  • cup pure maple syrup Can substitute with honey, agave syrup, or brown sugar.
Dry Ingredients
  • 1 ½ cups rolled oats Ensure oats are labeled gluten-free if necessary.
  • ¼ tsp baking soda
  • ½ tsp ground cinnamon Optional ingredient for extra flavor.
  • ½ tsp sea salt
Mix-ins
  • 2/3 cup chocolate chips Optional; use dark or white chocolate as desired.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a large cookie sheet with parchment paper.
  2. Whisk the eggs in a mixing bowl until well-beaten.
  3. Add the peanut butter and pure maple syrup to the bowl, stirring until the wet ingredients are well combined.
  4. Stir in the dry ingredients (oats, cinnamon, baking soda, and sea salt) until a thick, sticky dough forms.
  5. Mix in the chocolate chips until evenly distributed throughout the dough.
  6. Drop mounds of dough onto the prepared baking sheet, forming cookies of your desired size.
Baking
  1. Bake for 9 to 12 minutes, or until the cookies appear set. Recommended baking time is 10 minutes.
  2. Allow the cookies to cool for 10 minutes before serving.

Notes

Cookies are best enjoyed warm and gooey. Can be served with a glass of milk or ice cream. Store in an airtight container at room temperature for about a week, or freeze for up to three months.
