  • 3 cups watermelon cubed, chilled
  • 2 ripe peaches sliced or cubed
  • 1/3 cup feta cheese crumbled
  • 2 tbsp fresh mint leaves chopped or torn
Dressing
  • 1 tbsp lime juice freshly squeezed
  • 1 tsp honey
  • 1 tbsp olive oil
  • sea salt and cracked pepper to taste

Method
 

  1. In a large bowl, combine cubed watermelon and sliced peaches.
  2. Add crumbled feta cheese and chopped mint leaves.
  3. In a small bowl, whisk together lime juice, honey, olive oil, salt, and pepper to make the dressing.
  4. Drizzle dressing over the fruit mixture and toss gently to combine. Serve immediately, chilled.

Notes

Best enjoyed fresh. For make-ahead prep, store chopped fruit separately and add dressing, feta, and mint just before serving. Not freezer-friendly.
