Preparation
- Preheat your oven to 350°F (175°C) and grease your muffin tin.
- In a large mixing bowl, combine all-purpose flour, cornmeal, sugar, baking powder, and salt. Stir until well mixed.
- In another bowl, whisk together milk, vegetable oil, and egg until combined and frothy.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined.
- Fold in the chopped peaches and cinnamon gently.
Baking
- Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full.
- In a small bowl, mix together brown sugar and oats, then sprinkle over each muffin.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Cool slightly before transferring to a wire rack. Serve warm or at room temperature.
