  • 2 cups fresh or frozen peas Thaw frozen peas in advance, or blanch briefly to brighten their color.
  • 4 slices bacon Cook until crispy.
  • 1/2 cup red onion, diced
  • 1/2 cup cheddar cheese, cubed Can substitute with pepper jack for extra flavor.
  • 1/2 cup mayonnaise Consider using a light version or Greek yogurt.
  • 2 tablespoons apple cider vinegar Adjust to taste.

Method
 

Cooking Bacon
  1. Cook the bacon in a skillet over medium-high heat for about 5-7 minutes, or until crispy and golden brown.
  2. Remove from the pan and drain on paper towels to absorb excess grease, then crumble the bacon into small pieces.
Mixing Ingredients
  1. In a large mixing bowl, combine the peas, diced red onion, and cubed cheddar cheese. Toss gently to combine.
  2. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, salt, and pepper until smooth and creamy.
  3. Pour the creamy dressing over the pea mixture. Stir gently to ensure everything is well coated.
  4. Add the crumbled bacon and mix gently so the bacon remains chunky.
Chilling
  1. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Notes

For the best flavor and texture, serve chilled. Pair it alongside grilled meats or sandwiches. Can be made a day ahead to develop flavors more.
