Base Ingredients
  • 12 pieces Chocolate chip cookies Store-bought or homemade
  • 2 cups Vanilla ice cream Slightly softened for easy scooping
Toppings
  • 1 cup Red and blue sprinkles Available at most grocery stores, especially around national holidays
  • 1 cup Whipped cream Optional for serving

Method
 

Assembly
  1. Take two chocolate chip cookies and place a scoop of vanilla ice cream (about 2 tablespoons) in between them.
  2. Press the cookies together gently until the ice cream reaches the edge.
  3. Roll the sides of the sandwich in red and blue sprinkles, allowing the sprinkles to coat evenly.
  4. Repeat with the remaining cookies and ice cream to make as many sandwiches as desired.
  5. Place the assembled sandwiches on a plate and freeze for about an hour before serving.

Notes

Store leftovers in an airtight container in the freezer for up to one week. You can also prepare these sandwiches in advance for special occasions and freeze them until ready to serve.
