Crust Mixture
  • 0.75 cup grated parmesan cheese Use unsalted for better control of salt
  • 0.5 cup breadcrumbs Substitute with gluten-free breadcrumbs if needed
  • 4 tablespoons unsalted butter, melted
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 0.75 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon chopped fresh parsley For garnish
  • 1 tablespoon lemon juice For flavor

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking dish with parchment paper.
  2. In a bowl, mix together the grated parmesan cheese, breadcrumbs, garlic powder, kosher salt, black pepper, and melted unsalted butter until well combined.
Cooking
  1. Place the tilapia fillets in the parchment-lined baking dish and drizzle them with lemon juice.
  2. Press the crust mixture gently onto each fillet to ensure it adheres well.
  3. Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown and the fish flakes easily with a fork.
  4. Sprinkle the fillets with freshly chopped parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For freezing, wrap tightly and keep for up to 3 months. Reheat in the oven at 350°F for best results.
