Ingredients

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons olive oil for coating chicken
For the Vegetables
  • 1 pound baby potatoes, halved
  • 1 pound green beans, trimmed
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning

Method

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine Parmesan cheese, garlic powder, salt, and pepper.
  3. Coat each chicken breast with olive oil and then dip into the Parmesan mixture, ensuring they are well-coated.
  4. Place the chicken on a sheet pan.
  5. In another bowl, toss the baby potatoes with olive oil, minced garlic, salt, and pepper, then spread them on the sheet pan.
  6. Toss the green beans with olive oil, salt, and Italian seasoning before adding them to the sheet pan.
Baking
  1. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the potatoes are tender.

Notes

This dish is best served hot straight from the oven. Pair it with a simple salad or crusty bread to soak up the juices. For extra flavor, marinate the chicken in olive oil and seasonings for 30 minutes before baking. Make sure to coat the chicken well with the Parmesan mixture for a crispy finish.
