Preparation
- Preheat your oven to 375°F (190°C).
- In a shallow bowl, whisk the eggs with a bit of salt and pepper.
- In another bowl, combine the grated Parmesan cheese and breadcrumbs.
- Dip each chicken breast into the egg mixture, allowing excess to drip off, then coat in the Parmesan-breadcrumb mixture.
Cooking
- Heat olive oil in a large skillet over medium-high heat.
- Place the chicken in the skillet and cook until golden brown on both sides, about 4-5 minutes per side.
- Transfer the chicken to a baking dish and bake for 20-25 minutes or until the chicken is cooked through.
- Serve warm.
Notes
Serve with a simple salad, steamed vegetables, or mashed potatoes. Drizzling lemon juice over the chicken just before serving adds a nice zing.
