Main Ingredients
  • 4 pieces chicken breasts Pat dry before coating.
  • 1 cup grated Parmesan cheese Freshly grated is preferred.
  • 1 cup breadcrumbs Can use panko or crushed crackers.
  • 2 pieces eggs Whisked with salt and pepper.
  • to taste Salt and pepper Adjust according to preference.
  • as needed Olive oil for frying Heat in skillet.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a shallow bowl, whisk the eggs with a bit of salt and pepper.
  3. In another bowl, combine the grated Parmesan cheese and breadcrumbs.
  4. Dip each chicken breast into the egg mixture, allowing excess to drip off, then coat in the Parmesan-breadcrumb mixture.
Cooking
  1. Heat olive oil in a large skillet over medium-high heat.
  2. Place the chicken in the skillet and cook until golden brown on both sides, about 4-5 minutes per side.
  3. Transfer the chicken to a baking dish and bake for 20-25 minutes or until the chicken is cooked through.
  4. Serve warm.

Notes

Serve with a simple salad, steamed vegetables, or mashed potatoes. Drizzling lemon juice over the chicken just before serving adds a nice zing. Leftovers should be cooled and stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months. Reheat in the oven for best texture.
