Ingredients
  

For the casserole
  • 2 cups buttermilk pancake mix
  • 1 lb breakfast sausage (bulk or links) Cooked until browned and crumbly.
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup pure maple syrup For mixing into batter and serving.
  • 2 tbsp butter For greasing the baking dish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a large baking dish with butter.
  2. In a skillet over medium heat, cook the sausage until it is browned and crumbly. Drain any excess grease.
  3. In a bowl, combine the pancake mix, milk, and eggs. Mix until just combined; it’s okay if there are lumps.
  4. Fold in half of the maple syrup and some of the cooked sausage bits into the batter.
  5. Pour half the batter into the greased baking dish. Layer the remaining sausage on top, and then pour the rest of the batter over it.
Baking
  1. Bake uncovered for 30-35 minutes, or until the casserole is golden brown and springy.
Serving
  1. Serve the Pancake Sausage Casserole warm, drizzled with the remaining maple syrup.
  2. You can also pair it with fresh fruit or whipped cream for extra flavor. Cut into squares for easy serving.

Notes

Feel free to add vegetables like spinach or bell peppers for added nutrition and flavor. Substitute sausage with bacon or turkey sausage if preferred. Adjust sweetness by varying maple syrup quantity.
