Preparation
- Preheat your oven to 350°F (175°C) and grease a large baking dish with butter.
- In a skillet over medium heat, cook the sausage until it’s nicely browned and crumbly. Be sure to drain any excess grease.
- In a large bowl, combine the pancake mix, milk, and eggs until just mixed. Lumps are okay!
- Gently fold in half of the maple syrup and some of the cooked sausage into the batter.
- Pour half the batter into the prepared baking dish, then layer on the remaining sausage before topping with the rest of the batter.
- Bake uncovered for 30-35 minutes, until golden brown and springy to the touch.
Notes
You can prep this casserole the night before! Store in an airtight container for about 3-4 days in the fridge, or freeze for longer storage. Reheat in the oven or skillet for best results.
