  • 2 pieces ripe bananas, sliced
  • 4 large eggs
  • 2 cups milk
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 pinch salt
  • Butter for greasing For greasing the baking dish.
  • Maple syrup for serving (optional) To drizzle on top before serving.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with butter to prevent sticking.
  2. Place the cubed bread and sliced bananas evenly in the dish.
  3. In a medium bowl, whisk together the eggs, milk, brown sugar, vanilla extract, cinnamon, and a pinch of salt until fully combined.
  4. Pour the egg mixture over the bread and bananas. Use a spatula to gently press down, ensuring each piece is well coated.
  5. Cover the dish with plastic wrap and refrigerate overnight.
Baking
  1. Remove the casserole from the refrigerator and uncover.
  2. Bake in the preheated oven for 30-35 minutes, or until golden brown and the casserole has set.
  3. Allow it to cool for a few minutes before slicing.
  4. Serve warm, drizzled with maple syrup if desired.

Notes

For a delightful brunch experience, serve the casserole hot with a dusting of powdered sugar, fresh bananas, crispy bacon or sausage on the side, and pair with coffee or a mimosa.
