Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine broccoli, bell peppers, and carrot. Drizzle with olive oil, lemon juice, minced garlic, paprika, salt, and black pepper. Toss to coat well.
  3. Place salmon fillets on a baking sheet lined with parchment paper. Arrange the vegetable mixture around the salmon.
  4. If using, sprinkle dried oregano or fresh herbs over the salmon and veggies.
Baking
  1. Slide the baking sheet into the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Serving
  1. Serve your delicious creation with lemon wedges and garnish with fresh parsley or dill.
