Preparation
  1. Heat olive oil in a skillet over medium heat until shimmering.
  2. Sprinkle salt and pepper over the pork medallions and sear for 3-4 minutes on each side until browned.
  3. Remove the pork medallions from the skillet and set them aside.
Cooking
  1. In the same skillet, cook sliced onions low and slow until golden brown, about 5-7 minutes.
  2. Stir in the minced garlic and cook for about a minute.
  3. Add beef broth and soy sauce, bringing the mixture to a gentle simmer.
  4. Return the pork medallions to the skillet and let simmer in the gravy for an additional 5 minutes.
Serving
  1. Serve the pork medallions with creamy mashed potatoes or rice, alongside roasted veggies.

Notes

Sear the pork without crowding the pan. Use a lid while simmering to keep the pork moist. Warm the broth before adding it to maintain cooking temperature.
